Roasted Duck for Christmas Dinner

The marinade is key when preparing duck.

Ingredients:

1/4 cup coarse salt

1 tablespoon each :

dried basil

oregano

thyme

white pepper

1 teaspoon dried tarragon

3 garlic cloves minced

2 tablespoons lemon and orange zest

1 tablespoon lime zest 2 tablespoons

Freshly squeezed lemon juice

1/2 cup olive oil

When soaked in a marinade for several hours, duck meat will be more moist, tender, and delicious.

Whole ducks should be marinated for 3 to 12 hours.

Duck parts need only 3 hours to be marinated . Cooking time also depends on the size of a duck. Mine was 2 lbs and cooked for 2 hours.

Oranges for decorating only, but you also can make stuffed duck with apples and oranges.
