Chicken Schnitzel Keto Recipe

Schnitzel is a famous German dish but I remember how my mom cooked it almost every day when I grew up in Eastern Europe.

In this recipe I will not use traditional methods using bread crumbles, I will use instead gluten-free way and keto-friendly, I will use –almond flour.
So we need to prepare chicken breasts.

  • Organic chicken breasts 3 pcs
  • 3 eggs
  • Seasonings
  • Almond flour 1/2 cup
  • Sesame seeds(optional)

I wash it under cold water and then dry it out with a paper towel.
Cut into flat pieces.
Use a meat mallet to pound out the meat.
Then I used a deep Bowl to marinade all meat.

For the marinade I used:
Olive oil
Homemade Garlic Butter
Seasonings for steak

Mix all ingredients using your hands, to spread evenly all the spices.

Add cooking oil to the skillet ( I prefer to cook only with avocado oil, cause it has a high heat point, and it’s anti-inflammatory oil, compared to Canola, Sunflower, Corn oil, etc.)

I use 2 bowls

  • At first bowl, I whisk 3 eggs
  • At the second bowl, I have my dry mixture-almond flour, you can also add sesame seeds to it, but it’s optional)
  • Simply dip each slice of chicken to the 1st bowls with egg mixture, then to a second one with flour.
  • Use medium heat to fry them for 2-3 minutes on each side.

Serve with salad, or as I did, add spinach and fresh bell peppers, sprinkle with shredded mozzarella.
