Zapekanka or farmers’ cheesecake is a very popular dish in Eastern Europe. It’s a simple and cheap dessert, lauded for its pure flavors and mild sweetness.


  • 1 lb Farmers Cheese
  • 3 eggs
  • 3 tbsp melted butter
  • 1 tsp Vanilla extract
  • 1/4 cup almond or coconut flour
  • 1/4 cup sweetener
  • 1/4 cup blackberries
  • 1/4 cup coconut flakes, optional


Mix all ingredients in a bowl, feel free to add more flour if you don’t like cheesecake too moist.

Pour batter into the baking mold, I use silicone, if you use any other, use parchment paper.

Bake Farmers cheesecake needs 1 hour and 15 min at 375F

Let the cake cool completely before serving.
