I know that yesterday was a national Pancakes Day, everyone post their recipes,but I decided to post them today!

So quick and easy to make.

Perfect fluffy traditional Pancakes.


  • 1 cup Almond flour
  • 2 eggs
  • 1/3 cup Almond/coconut milk
  • 2 tbsp. Melted butter
  • 2 tbsp. Monk Fruit Sweetener
  • 1/2 tsp. Baking soda


1.Whisk all ingredients together in a bowl until smooth. (Batter should be the consistency of typical pancake batter. If it’s too thick, add a little more milk. Don’t add too much, or the pancakes will be too “wet”

2.Preheat pan on the stove over medium-low to medium heat. I don’t use any cooking oil, my pan is non-stick, so it is allowed me to cook without oil. But you can add some ghee or coconut oil. Drop the batter onto the hot pan and form into circles.

3.Cook about 1.5-2 minutes, until bubbles start to form.

4.Flip and cook another 1.5-2 minutes, until browned on the other side.

5.Repeat with the rest of the batter.

6.Serve with your favorite sugar-free topping, I like to use whipped heavy cream or sugar-free chocolate syrup.

But I know some brand has Sugar-free Maple Syrup.
