• 1 cup almond flour
  • 2 tbsp coconut flour
  • 3 tbsp melted butter
  • 2 tbsp Collagen powder( It has sweetener)
  • 3 tbsp sweetener ( you can add if not using sweetened Collagen)
  • 2 eggs
  • 1/3 tsp baking soda
  • 1/2 cup diced fresh Strawberries
  • 1/2 tsp Vanilla extract
  • 1 tsp Xanthan gum


  • Mix all ingredients, stir all together, if you don’t have Collagen, you can use protein powder but make sure if it sweet enough or not, so you can add extra sweetener if you like
  • Add Xanthan gum because Strawberries are watery and Xanthan gum can thicken the batter.
  • Fill out the baking molds
  • Bake 25 minutes at 385F
  • Let it cool before add topping, or it’s going to melt.
  • Serve with whipped cream and white chocolate chip.
