Keto Choco-Coco Muffins

Ingredients for 4 Muffins

I double the portion to made more.

  • 1/4 cup cocoa powder
  • 1 cup almond flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 3 tbsp Erythritol
  • 1/4 cup almond milk
  • 2 eggs

How to do :

Add all ingredients to a bowl, stir together, if the dough is dry add a little more milk, fill out the baking mold,

I use silicone, cause it such easier to bake, but regular Muffins form with parchment paper also can work.

Bake Muffins 15-18 minutes at 375F

Let them cool, while preparing the top glaze,

I used chilled overnight at fridge coconut milk because when it chilled is easy to split hard part of milk and liquid. We use only hardened parts and 2-3 tsp Erythritol,

blend together 2 minutes.

I didn’t have a decorating bag for glazing, I filled a zip lock bag and simply cut one corner, add glazing on top of each muffin and sprinkled it with unsweetened coconut flakes.

Now it is also good idea to chill Muffins at the fridge and then fill out cup of coffee and enjoy!
