St.Patrick Day inspired me to cook something green, but when you don’t have food colors you can improvise. I use green Matcha tea powder not only for color but for Antioxidant effects from Matcha tea.


  • 1/4 cup coconut flour
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 2 tsp Matcha powder
  • 3 eggs
  • 1/4 cup Two Good vanilla yogurt
  • 1/2 cup coconut milk
  • 2 tbsp sweetener
  • 1/3 tsp sea salt
  • Avocado oil


  • Whisk all ingredients until combined Heat a nonstick pan over medium-high heat.
  • Add in 2 teaspoons of avocado oil and spread it evenly in the pan.
  • Scoop 3-4 pancakes into the pan.
  • Turn the heat down slightly.
  • Cook on the first side until puffed and bubbles are starting to form on top, about 3-4 minutes.
  • Serve with sugar-free maple syrup or whipped heavy cream.
